A Manly 5-Minute Chicken and Black Bean Microwave Quesadilla Recipe

Game just started and you finished off all the pita chips and vegan shit your girlfriend left in the fridge.  It hits you there’s an old rotisserie chicken hidden behind the beer for emergency situations like this one.  You’re hungry and you’re a man.  Men can build things with their bare hands, so here’s a fast microwave quesadilla recipe you can put together that tastes great, is high in protein, and is actually healthy.

Ingredients

1/2 cup shredded rotisserie chicken
1/3 cup black beans
1/3 cup corn
1 tortilla
1/3-1/2 cup shredded Mexican cheese
Chipotle seasoning
Garlic powder
Sea salt

Lime
1/2 avocado
2 tbsp. 2% fat Greek yogurt
1-2 tbsp. salsa
*Optional diced jalapeños

Microwave Quesadilla In 5 Easy Steps

Step One Shred or dice the chicken and make sure to remove all the bones. Heat tortilla up in microwave for 10-20 seconds.  Placing the tortilla between two damp paper towels will keep everything from drying out. No one likes an overcooked tortilla. No-one.
Step Two Layer tortilla with beans, corn, and chicken.
Step Three Sprinkle on a dash of chipotle seasonings, garlic powder, and sea salt.  Cut lime in half and drizzle juice on beans and chicken.  Add jalapeños if desired.

Second thought, since you’re a man who laughs in the face of danger, add a LOT of jalapeños.

Step Four Sprinkle on cheese and fold over to form quesadilla.
Step Five Microwave for about a minute until cheese is melted.  Serve with avocado, salsa, and Greek yogurt on the side. If you’re feeling fancy, mix the avocado and salsa together for a quick guacamole.  Now pour a shot of tequila and revel in your microwave masterpiece of glory.
